Ned’s Famous Beef, Pork, Chipotle Tabasco & Black Bean Chili

This is an excellent recipe. It is a simple one-pot dinner; my kids love it, it is very versatile and can be used for a number of other recipes and family meals.

INGREDIENTS

  • 157 ml bottle Tabasco chipotle sauce*
  • 3 tablespoons chilli powder
  • 3 tablespoons cracked black pepper
  • 6 tablespoons kosher salt
  • 6 tablespoons dehydrated onions
  • 4 tablespoons dehydrated garlic
  • 1 small can tomato paste (156 ml)
  • 3 large diced canned, fire-roasted tomatoes (28 ounce)
  • 3 cans black beans (398ml)
  • 3 cups frozen corn
  • 2 pounds regular ground beef
  • 1 pound ground pork
  • 4 tablespoons canola oil

* The great thing about this Chipotle Tabasco is that it is jam packed full of flavour, without the heat) make sure you have 2 bottles, one for the recipe, and one for adding move flavour and spice on you other your favourite recipes)

PREPARATION

  • In a large pot over medium/high heat sauté the beef in the canola oil until golden brown, remove and drain the oil.
  • In the same pot, sauté the pork until golden brown, remove the pork and drain the excess fat.
  • Reduce the heat to medium.
  • Add the garlic and the onion, cook for 30 seconds stirrings constantly to not burn the garlic and onion.
  • Add the chilli powder, black pepper, salt, tomato paste, canned tomatoes, and half the bottle of the Tabasco Chipotle sauce**
  • Stir to incorporate with a wooden spoon.
  • Add the browned beef and pork, rinsed black beans and frozen corn. Cover with a lid and turn the heat to low.
  • Cook for 1 hour.
  • Serve with a healthy salad or steamed broccoli, a loaf of your favourite bread, some grated cheddar cheese and some sour cream

** I added the entire bottle, but I love the flavour. Don’t worry, it’s not spicy, its jammed packed full of a deep smoked and spiced red jalapeño flavour)

Because this chili is relatively mild, it’s very adaptable to lots of others recipes. Here are a few examples!

Tacos:

Make your favourite tacos with soft white or yellow corn tortillas or hard corn taco shells, heat up the Chipotle Tabasco chili mix, serve family style with sliced avocados, diced fresh tomatoes, diced red onions, chopped cilantro, and a bottle of the Chipotle Tabasco on the table to be added to your tacos for additional flavour.

Lasagna:

Layer pasta sheets in a casserole dish with the Chipotle Tabasco chili mix, spinach, zucchini, grated Parmesan, grated mozzarella, ricotta cheese and bake in a 375-degree oven uncovered for 1 hour.

Substitution options:

You could turn this recipe into a Vegan Chili by replacing the ground beef and pork with plant-based ground protein, or by adding 2 cans of chickpeas (to replace the beef) and 2 cans of lentils (to replace the pork).
